Learn how to make refried beans from scratch with this easy, healthy classic recipe for vegan refried beans.
my choice:
- Half a cup chopped fresh coriander
- Put the dried beans in a pot and cover with water. Soak overnight. Drain the water and dispose of it and put it in a large pot.
- Add 6 cups of fresh water, vegetable broth cubes, bay leaf, chili powder, cumin, oregano, and cayenne pepper.
- Cover with a lid and cook until very soft (about 1 – 2 hours), stirring occasionally. It may replace liquid lost to evaporation. It shouldn’t be overly dry, you should have a liquid broth when you’re done cooking. Season with salt and pepper as required. Remove from heat, cover and set aside.
- When the beans are almost done, heat the olive oil in a large saucepan Cast iron or a non-stick frying pan.
- Add onion and garlic and sauté for 10 to 12 minutes over medium heat, until translucent and soft, stirring constantly.
- When the beans are cooked, lift the bay leaves and spoonful of the beans from the pot to the hot pan with a perforated spoon to drain the liquid into the bean pot, keeping the bean-cooking liquid in the pot. Continue spooning them into the skillet with the onions and garlic until they are all transferred. Use a masher to mash the beans while they cook over medium-low heat. Scoop bean liquid, one scoop at a time, as you mash the beans until you have the desired mashed consistency and moisture level. The beans should be tender, with a few pieces of whole beans, and have a firm, moist texture. Note: The beans will continue to dry out while serving, so you may want to make them more moist than you like.
- Garnish with chopped cilantro (optional) and serve immediately with tortillas as a side dish or for tacos, burritos, and salads.
- Makes 8 servings (3/4 cup each)

instant pot Instructions: To use Quick Pot, omit step 1, follow steps 2-3 in the Instant Pot, and press “Prepare Beans/Chili”. Remove it from the Instant Pot, and follow steps 4 through 8.
