Ingredients

Tortilla soup required

  • 2 tablespoons of olive oil
  • 1 yellow onion, chopped
  • 1 large or two small zucchini, chopped
  • 4 Cloves of garlic, minced
  • Juice from 2 limes
  • 2 teaspoons garlic powder
  • 2 teaspoons of thyme
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 1 teaspoon of salt

  • 1 15-ounce can roasted plum tomatoes
  • 15 ounce can of crushed tomatoes
  • 32 ounces chicken broth
  • 1 cup of water
  • 3 cups of shredded grilled chicken
  • 4 Quest bags of tortilla chips to top
  • Chopped coriander to decorate
  • 2 avocados cut into slices
  • pepper if desired for topping

method

  1. In a large, heavy-bottomed saucepan, light a medium heat. Once heated, add the olive oil, onion, and zucchini And cook until it becomes transparent.
  2. Add garlic and spices and cook for two minutes brouwn.

  4. scoop soup to Serving bowl topped with Quest chips, avocado slices and fresh cilantro.
  5. Put hot pepper on top if desired.
