Ingredients:
- one bag Quest Ranch Tortilla Chipscrushed
- 1 cup almond flour
- Half a cup of Cotija cheese
- Half a tablespoon of baking powder
- Half a teaspoon of salt
- 1 cup shredded mozzarella cheese
- 1 tablespoon cream cheese
- 1 egg
- 16 sausages cocktail
method
- Preheat the oven to 350 degrees Fahrenheit and prepare a baking tray with parchment paper.
- In a mixing bowl, mix flour, cotija cheese, baking powder, and crushed flakes together.
- In another microwave-safe bowl, melt the mozzarella cheese and cream together for 30 seconds and stir smoothly.
- Whisk in the eggs.
- Add the mixture to the dry ingredients in a mixing bowl and use a rubber spatula to stir them together until a paste forms.
- Separate the dough into 16 equal-sized balls and press them flat.
- Wrap each one around a small sausage piece and place it on the baking tray.
- Brush baby corn dogs with egg wash (one egg and 2 tablespoons water whisked together) and bake for 13-16 minutes and golden brown.
- Served with spices.
