- 1⁄2 cup pumpkin puree
- 1 cup natural peanut butter
- 1 egg
- 1 teaspoon vanilla
- 1⁄2 cup almond flour
- 1 scoop Quest Caramel Protein Powder
- 1⁄2 cup calorie-free sweetener
- 1⁄4 teaspoon baking soda
- 1⁄4 teaspoon baking powder
- 1⁄4 teaspoon cinnamon
- 1⁄4 teaspoon pumpkin spice
- pinch of salt
- 16 mini Quest Peanut Butter Cups
- 1⁄3 cup sugar-free chocolate chips
- 32 pcs mini eye candy
method
- In a bowl, whisk together pumpkin, peanut butter, eggs, and vanilla extract.
- In another bowl, whisk together the almond flour, protein, sweetener, baking soda, baking powder, cinnamon, pumpkin spice, and salt.
- Add the dry ingredients to the wet and stir with a rubber spatula until the dough holds together and no dry spots remain.
