- Preheat oven to 350 degrees Fahrenheit and prepare an 8-by-8-inch skillet with parchment paper.
- In a microwave-safe bowl, melt chocolate and butter together, and allow to cool slightly.
- In another bowl, mix the almond flour, sweetener, cocoa powder, protein, baking powder, and salt.
- Place the eggs in a stand-alone mixer or in a mixing bowl while using a hand mixer, and beat the eggs until fluffy, about 2 minutes. Add the chocolate/egg mixture and vanilla. Mix until combined.
- Add the dry ingredients and stir until the mixture comes together and no spots remain. Transfer the mixture to the prepared pan and spread it out into an even layer. Bake the brownies for 16-18 minutes.
- Let cool completely before melting the white chocolate and covering with chopped Quest Peppermint.
