At Quest Blog, we lean heavily towards the “no” camp. That’s why we were so excited when we learned about this recipe for pumpkin chocolate chip pies. Now this is a protein bar that has reached its full potential.

Ingredients:
- cup almond flour
- Coconut flour cup
- 1 scoop Quest Salted Caramel Protein Powder
- Half a cup of zero-calorie sweetener
- 2 teaspoons baking powder
- Half a teaspoon of salt
- 1 Quest Pumpkin Pie Barcut into small pieces
- ½ cup + 2 tablespoons almond milk, separated
- Half a cup of vegetable oil
- ½ cup pumpkin puree
- 2 eggs
- 1 teaspoon vanilla
- Sugar-free chocolate chip cup
method
- Preheat oven to 350°F and prepare a muffin tin with 12 liners.
- In a mixing bowl, mix together the almond flour, coconut flour, protein, sweetener, baking powder, and salt.
- In a microwave-safe mixing bowl, melt pumpkin pie and 2 tablespoons almond milk together in 20-second increments, stirring between each until smooth.
- Add the remaining milk, oil, pumpkin puree, eggs and vanilla and whisk until smooth and well done.
sum. - Add the dry ingredients to the wet and use a rubber spatula to mix until combined.
- Use a cookie scoop to distribute the mixture between the liners. Cover each muffin with some chocolate chips and bake for 18-22 minutes and golden brown.
