method
- In a mixing bowl, whisk egg whites, protein, coconut flour, almond milk, zero-calorie sweetener, and salt together.
- Use an immersion blender to mix any bits of protein powder.
Heat a large skillet with nonstick spray over medium-low heat. - Once heated through, remove pan from heat and gently pour in ¼ cup of the mixture while stirring the pan to loosen the batter into an even layer.
Cook for 1-2 minutes, until edges begin to pull away. - Use a rubber spatula to gently flip the crepe over and cook the other side for 20 seconds.
- Repeat until you have used all of the mixture (about 5 crepes).
Use a hand mixer to beat the heavy cream until fluffy. - Add the protein powder and mix until combined.
- Transfer to a piping bag.
- Put the filling in the middle of each crepe, cover with the crumbs of a sable piece, and half of the chocolate chips and then wrap the crepe.
- Melt remaining chocolate chips in a microwave-safe dish and sprinkle over crepes before serving.
