Here’s something you might not have guessed about us here at the Quest Blog: We dig up crepes. Sure, why did you think of this moment? But the fact remains that when we first heard about crepes that made Quest Vanilla Milkshake Protein Powder and Quest Smores Protein Bar, we had to find out more. Here’s what we learned: 17g of protein with 8g of net carbs and 2g of sugar! Then we tasted it and knew it was delicious. So now go make some crepes.

  1. In a mixing bowl, whisk egg whites, protein, coconut flour, almond milk, zero-calorie sweetener, and salt together.
  2. Use an immersion blender to mix any bits of protein powder.
    Heat a large skillet with nonstick spray over medium-low heat.
  3. Once heated through, remove pan from heat and gently pour in ¼ cup of the mixture while stirring the pan to loosen the batter into an even layer.
    Cook for 1-2 minutes, until edges begin to pull away.
  4. Use a rubber spatula to gently flip the crepe over and cook the other side for 20 seconds.
  5. Repeat until you have used all of the mixture (about 5 crepes).
    Use a hand mixer to beat the heavy cream until fluffy.
  6. Add the protein powder and mix until combined.
  7. Transfer to a piping bag.
  8. Put the filling in the middle of each crepe, cover with the crumbs of a sable piece, and half of the chocolate chips and then wrap the crepe.
  9. Melt remaining chocolate chips in a microwave-safe dish and sprinkle over crepes before serving.
