If you’re not used to overnight oats, throw all your ingredients together, store them in the fridge, and then overnight, the magic happens. The whole liquid oats absorb and soften, resulting in a creamy bowl of oatmeal!
I’m a big fan of night oats in the summer months because they don’t need an oven or stove and are served cold! There’s nothing better on a hot summer morning than a big bowl of iced creamy oats.
This version offers all the tropical vibes with fresh mango! Mangoes are in season and especially delicious during the summer months from May to September, which is another reason I love this recipe for summer breakfasts.
But this recipe is delicious and accessible all year round thanks to the frozen mango! I just thaw it before using it.
Mango is blended with honey, ginger, cinnamon, agave, and coconut milk to make a spicy, tropical base for rolled oats. There are many ways to customize this recipe as well based on your taste preferences (see FAQ).
I like to top mine with more fresh mangoes, shredded coconut and chia seeds, then close my eyes and imagine I’m on a tropical beach somewhere :).

Oatmeal flakes: Make sure you buy old-fashioned rolled oats, not steel cut oats or quick oats. Rolled oats are best for absorbing liquid and creating a creamy texture.
mango: I used a type of honey (originally known as Ataulfo) but any type will work just fine! I like to make this with fresh mangoes during the summer months when it’s available but a frozen one will do just fine all year round.
cinnamon: It adds a warm spiced element.
Ginger: I use ground ginger which gives the flavor a bit of spice.
Aloe vera nectar: For sweetness but you can leave it on or use another sweetener of your choice.
leben: I use a coconut milk drink as it enhances the tropical flavors but you can use cow’s milk or any other non-dairy milk alternative! I’ve also used almond milk when it’s all I have!

How to make mango oats overnight
Step 1: Cut the mango in half, down one side of the hole and then the other. With a half, use the knife to make a longitudinal and transverse cut without cutting the peel. Press the cut mango slices up until they pop out. Next, cut or peel each cut piece.
Step 2: In a high-speed mixer, blend mango, ginger, cinnamon, agave nectar, salt, and coconut milk syrup until smooth.
Step 3: Pour the mixture into a large mixing bowl. Add the oats and stir until combined.
The fourth step: Cover the bowl and keep it in the refrigerator overnight, or for at least 6 hours. Share in individual servings (I like to use mason jars).
Fifth step: When ready to eat, quickly stir in the oats and add desired toppings. I added fresh mango, shredded coconut and chia seeds

- Oats can be enjoyed overnight cold, warm or hot. In the cooler months, I like to put mine in the microwave for about a minute. In the summer, I enjoy it cold, straight from the fridge!

- For a creamier oats, add 1/2 cup Greek yogurt.
- If you do not have agave nectar, you can use honey or maple syrup to sweeten.
- For an extra boost of spice, antioxidants, and vibrant color, add 1 teaspoon of turmeric powder.

Can I use other types of oats like steel oats or quick oats to make overnight oats?
You can technically use any type of oats to make overnight oats, but results will vary widely. Quick/Quick Oats are so small that they will end up getting soggy, and steel cut oats will produce a dense, very chewy texture. Rolled oats are your best bet for a creamy texture!
What are the nutritional benefits of mango?
Mango is rich in vitamin A, which is essential for vision and helps maintain healthy skin, and vitamin C important for wound healing and immune function. Plus, Research has linked the polyphenols, galactanin and gallic acid in mangoes to digestive health benefits.
Is this night oats vegan and gluten-free?
yes! These Mango Night Oats are vegan and gluten-free. Rolled oats are naturally gluten-free but can be processed in a facility that manufactures gluten-containing products and may contain traces of gluten. If you have celiac disease (gluten sensitivity), be sure to look for a certified gluten-free brand of rolled oats.
Should I store oats overnight?
Overnight oats are best stored, you guessed it, overnight. Storing them for at least 8-12 hours will result in the creamiest result. However, it’s soft enough, IMO, after only 4-6 hours, if you’re in trouble!
Can I Use Frozen Mango For This Night Oats?
yes! It is best to let the frozen mango thaw first before mashing it.

Overnight oats can be stored in an airtight container for up to five days in the refrigerator. The longer you soak the oats, the softer they become. I like to store oats overnight in an airtight glass jar (like a mason jar). This storage makes it easy to eat breakfast on the go. Be sure to add any crunchy or fresh toppings (such as fruit) in the morning to avoid getting those items wet.

- 1 teaspoon ground ginger
