Kohlrabi potatoes are the delicious way to use up cabbage at CSA or from the farmers’ market. With options for both air fryer and oven-baked, there are French fries for everyone!Crispy cabbage fries. Seriously, I’ve never enjoyed kohlrabi more before. Covered with frying spices. Paired with your favorite dive. Get ready for this to be your new favorite side dish.

Ready in just 15 minutes in the air fryer or 25 minutes in the oven! Easy to bake in the oven or cook in the air fryer.

What is electrophoresis?

The name kohlrabi comes from a combination of the German words for cabbage and turnip, which this vegetable reminds us a little. It tastes sweet, tangy, and slightly peppery when eaten raw and feels like jicama or turnip. You can eat the leaves on the cabbage too, as long as they look ok! Similar to collard greens, they are sautéed with garlic or added to soups or stir-fries. Cruciferous vegetables, similar to cabbage, broccoli, and Brussels sprouts, cabbage is rich in fiber, fiber, vitamin C, potassium, and antioxidants that have been shown to help reduce the risk of cancer.

How to use kohlrabi

You can enjoy kohlrabi raw, either shaved, grated, or thinly sliced, in a slaw or salad, or blended with flour and eggs to make it. Cabbage pancakes. Or you can cook cabbage by roasting it in the oven with different herbs and spices, or mashed like potatoes.

Notes on ingredients

Kohlrabi: You can find kohlrabi at your local farmers market all fall season. Some grocery stores with a robust produce section may carry it during fall and winter.

Smoked red pepper: This seasoning is one of my favorites – it adds a smoky, spicy and light sweetness to these french fries

cumin: Cumin is a warm spice, and adds an earthy and nutty flavor.

How to make cabbage fries

Step 1: (If using the oven, preheat to 425°F) Begin preparing the cabbage. Using a vegetable peeler or a sharp knife, remove the tough outer skin.

Step 2: Cut the cabbage in half lengthwise.

Step 3: With the cut side down, slice the cabbage vertically into 1/2-inch strips.

Step 4: Cut the cabbage slices into 1/2-inch matchsticks.

Step 5: In a large mixing bowl, add the cabbage, olive oil, garlic powder, smoked paprika, cumin, and salt and stir until the kohlrabi is evenly coated.

1. Remove the outer crust.  2. Cut in half.  3. Cut vertically, 1/2 inch.  4. Cut the fillets into 1/2-inch matchsticks.  5. Stir with spices and oil.

To prepare the cabbage baked potatoes:

Step 6: Make sure your oven is preheated to 425°F. Cover a baking tray with butter paper. Place the cabbage on a baking sheet and spread it out so that the cabbage is evenly spaced in a single layer.

Step 7: Bake the cabbage, flipping halfway through, until cooked through and edges are browned, about 25-30 minutes.

For an air fryer like Halabi Fries:

Step 6: Put the marinated cabbage into the basket of the air fryer, and shake the basket to remove the kohlrabi from the vacuum.

Step 7: Set air fryer to 400°F and cook, shaking basket every 5 minutes, until cabbage is tender and brown on edges, about 12-17 minutes.

  1. Try cutting the cabbage into equal-sized matchsticks to ensure even cooking. If some potatoes are larger, they will take longer to cook, while smaller ones will burn/burn faster.
  2. Stacking the air fryer leads to longer cooking time and more uneven cooking. Make sure there are some air pockets between the fries.

What does kohlrabi taste like?

Cabbage tastes sweet and slightly peppery when eaten raw and has a texture similar to jicama or kale. You can also eat cabbage leaves (as long as they look good), which taste like green cabbage.

Can you eat raw cabbage?

yes! Raw kale is delicious and is thinly sliced ​​or shredded and used in salads or kale.

Are cabbage potatoes better in the oven or an air fryer?

Personally, I like the potato kohlrabi better when cooked in the air fryer but if you don’t have any air fryer, baking them in the oven is delicious too!

Can I double this recipe?

You certainly can! But you will need to adjust the cooking time. For an air fryer, you will likely need to double the cooking time, closer to 25-30 minutes. For the oven, you may need to use two baking sheets to make sure the potatoes have enough room to cook, or you may have to use a larger baking tray, or bake a little longer, closer to 35 minutes.

What types of dips/sauces can I serve my cabbage with?

Any dip or sauce you like! I personally thought these were great when paired with garlic aioli or a version of Magical 3 Ingredients Kitchen Sauce – I used a mix of mayonnaise, mustard, and sriracha.

Are cabbage fries as crunchy as regular french fries?

honestly no. Cabbage potatoes become small brown or slightly crunchy at the edges, but the longer you cook them, the more likely they are to burn rather than become crunchy. I still find it tender and delicious even if it’s not as crunchy as french fries.

Can You Reheat Electric Potatoes?

surely! You can reheat french fries in the microwave, oven, or air fryer, but they will likely lose some of their power in the microwave.

How long do cabbage potatoes stay in the refrigerator?

Store cabbage potatoes in an airtight container in the refrigerator for 3-4 days. Make sure the potatoes are completely cooled before storing them in the refrigerator.

Can you freeze cabbage potatoes?

  • 1.25 lbs kohlrabi (about 1 big or 2 kohlrabi small – medium) peeled and cut into matchsticks
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked red pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt

To prepare the cabbage baked potatoes:

  1. Preheat the oven to 425 degrees Fahrenheit. Line a baking tray with parchment paper.
  2. Place the cabbage evenly on a baking tray in a single layer.
  3. Bake, flipping halfway through, until cabbage is softened and browned, about 25-30 minutes.

For an air fryer like Halabi Fries:

  1. Place the cabbage in the air fryer basket and shake the basket to make sure the potatoes are spaced across the entire basket.
  2. Set air fryer to 400°F and cook, shaking basket every 5 minutes, until cabbage is softened and browned, about 12-17 minutes.
