But a tart? “Pie, you say?” It was our reaction. Very suspicious, we assure you. But then we found out that the Quest Double Chocolate Protein Bar is in this offering out of left field. We’ve tried it and love it. Now we are a snappy people.

method

  1. Mix the almond flour and cocoa powder in a bowl.
  2. Add sweetener and salt. Use a cheese grater to grate the cold butter into the dry mixture.
  3. Use your hands to mix until small crumbs form.
  4. Place the bowl in the refrigerator for 20 minutes. Take out the bowl and put the crumbs in a food processor and blend until crumbly.
  5. Press crumbs into bottom and top sides of 9-inch tart pan and bake for 10-15 minutes at 350°F.
  6. Make the filling by placing the heavy cream (reserving 2 tablespoons), butter, and husks in a heavy-bottomed saucepan over medium heat. Bring the mixture to boil.
  7. Meanwhile, cut the chocolate bars into small pieces and place them in a heatproof bowl. Pour the boiling cream mixture over the chocolate and leave for 5 minutes.
  8. Meanwhile, cut the Quest board into small pieces and place them in a microwave-safe bowl with 2 tablespoons of heavy cream. Melt the bar for 20 seconds, stirring between each bar until smooth, then add to the chocolate mixture, whisking until smooth and combined.
  9. Pour the mixture into the tart and let it sit at room temperature for 20 minutes before placing it in the refrigerator to cool until firm, about 1 hour. Cover with orange slices cut into 18 slices and serve.
