Avocado Corn Pancakes Wanted
Ingredients:
- 1 medium head cauliflower
- 3⁄4 cup canned corn, drained
- 1 cup shredded cheddar cheese
- 1⁄2 cup almond flour
- 2 eggs
- one bag Questsur Cream Onion Protein Chips
- Salt and ground pepper to taste
- 1⁄2 avocado
- 1⁄4 cup coriander
- 2 tablespoons sour cream
- 1⁄4 cup water
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 2 tablespoons olive oil for frying
method
- Chop the cauliflower into florists, then add it to a food processor until finely chopped like rice-sized pieces, then transfer to the microwave and cover with plastic wrap.
- Cook over high heat for 7-8 minutes, cook and allow to cool slightly.
- Transfer to a tea towel and drain the excess liquid.
- In a bowl, stir together the drained cauliflower, corn, cheese, almond flour, eggs, crushed flakes, salt, and pepper.
- Divide the mixture into 10 tablets. Heat a large skillet over medium high heat.
- Once heated up, add 2 tablespoons of oil and 2-3 pieces of cauliflower.
- Cook for 2 minutes and turn golden brown, flip and cook on the other side. *Note – If a corn on the pie falls off, remove it from the pan before it gets too hot and explodes.
- Repeat until all pancakes are done.
- Put the avocado, cilantro, sour cream, water, lemon juice, salt, and pepper into the mixture and blend until smooth.
- Put a piece of avocado cream on each piece and serve.
