Welcome to holiday cooking with this adorable collection of 45 veggie recipes for the holiday season. All of these recipes are 100% vegan and 100% delicious! I’ve always said the holidays are all about the sides, and vegetables are always the highlight of the holiday table and party menus. These vegetable recipes bring bright color, lively flavor, and crunchy texture to your menu in all categories, including soups, vegetable salads, vegetable appetizers, vegetable side dishes, casseroles, pasta dishes, and even desserts.
There are plenty of seasonal vegetables this time of year, including root vegetables like carrots, turnips, and parsnips, beets, avocados, and winter squash, and tubers, including potatoes, turnips, and sweet potatoes. It’s a great time of year to honor plants!
