- 5-6 cooked baby beetroots (you can find them already cooked near the fruit at Whole Foods such as love beet Brand)
- 6 ounces feta cheese (any other hard cheese will work, too)

- Cut the feta cheese into small cubes, the same size as the chopped beats.
- Gather everything together: fold the watercress leaves in half and pack them at the end of a toothpick, then add the beets. Carefully top off the walnuts (through the middle works best) and finish with the feta cheese.
- Apply a little balsamic or vinaigrette right before serving if desired, but of course the feta mix is also good on its own!

Zucchini and goat cheese rolls
Three magic ingredients with this one – just slice the zucchini, spread it with goat cheese, and roll it up!
Garnish with some red pepper or some herbs.
You can cook or grill the zucchini if you like, or leave it raw.

- 2-3 zucchini
- 4 ounces soft goat cheese
- Roasted red pepper (about 1), cut into small cubes or slices

- Cut the zucchini into thin slices lengthwise into long slices. A mandolin slicer should work just fine, but you can also cut it into thin slices with a sharp knife. If the raw zucchini is thinly sliced, it will work great, but you can also roast it for extra flavor and make it softer.

- Put a small piece of red pepper into a skewer and push it about halfway through.
- Roll up the zucchini. Add it under the red pepper on the toothpick.
